Irreparable Data Corruption Issues relating to Windows 11 built in virus & threat protection

We have a stand alone machine acting as a server running Windows 11 Pro which hosts our Sage data (V30.0.171.0).

We have about twelve Windows 11 machines (all less than 12 months old) connected to the data via a network share over Gigabit CAT 6.

All has worked well until recently when we started getting irreparable data corruption issues.

I removed our third party AV (Trend Micro AV) from the server with no joy. NB: We had set it up as per the Sage article around AV folder and file exceptions.

I narrowed it down to Windows 11's own Virus & threat protection software. If I disable Real-time protection on the machine acting as a server it works fine.With it enabled, at some point within a few days it will crash the data service and corrupt the data.

Although not an ideal fix we thought we could just leave it disabled but we are finding it keeps enabling itself.

I have tried various online articles to permanently disable it with no joy. Has anyone else come across this issue?

NB: We have already checked data speeds, reloaded the software, swapped the server with a spare new machine. Most of our kit is new.
