Does anyone know how to create a new Summary Screen gadget for the dashboard, currently if I go to my custom entity (Project) there is one there (a filter screen) but not the main summary screen.
What settings marks whether a Screen under the entity is available or not to be used as a Summary Gadget on the Dashboards?
Unfortunately you have misunderstood the question.
On the Dashboard you can add a Gadget that is a 'Summary Pane' with fields on it, and will show data based on a record that is selected, my question is what controls what Screens become available to pick from, as not all Screens are listed. 
As under my custom entity 'Project' I have more screens available that those listed here.
