I'm wondering if there's any way to run a report filtered by SERVICE type? Screenshot below:

I know others have answered, but the simply answer is yes you can. Any field within CRM (standard or custom) can be reported on within the product. It will come down to what Source View that you use to build the report (the SQL query that tells the system what tables and fields are available to the report).
Looking at your screen I guess the source view called 'Opportunity Summary' should suit, otherwise if there is no view to use, or unsure what is available, I'd suggest reaching out to your business partner for guidance as well.
