Sage 300 Performance over LAN, WAN, and VPN

I've seen a lot of discussion about Sage 300 performance on a LAN vs WAN vs VPN. We have traditionally run Sage 300 over a LAN with clients, server, and database all on the same network (client machines using 1Gbps network adapters).  When the pandemic hit and every one moved home, we kept the Sage 300 users performance the same by using Remote Desktop.  However, we are moving away from Remote Desktop and letting the users have their client machines at home, connecting back to the office over the internet.  We have already tried using VPN software to connect the client back to the office and performance has dropped dramatically. We are considering getting rid of the VPN and just trying to connect over the internet (no encryption) just to rule out the VPN software itself (is it the encryption that causes the performance issues, or is it simply the internet bandwidth itself). 

Does Sage have an official statement about network speed/requirements?  Is 1GB required?  or would Sage 300 work fine over 100Mbps?  Because our office has a 500 Mbps pipe (both up and down) and at least one user has 1GB internet at their house.  So it seems like the network speed would be sufficient still.

I'm looking for something specific from Sage to say "this isnt supported" or "this should work".  Not just perspectives. Actual solid requirements over what is needed to get acceptable performance from Sage 300.
