All of the Roth options are available except the SIMPLE, which I need. Sage support suggests I just dummy the Roth IRA or Roth 401(k) radio button. What? Any other suggestions?

The SIMPLE plan setup via the Payroll Setup Wizard in Sage 50 US currently defaults the employee contributions to taxable (i.e. Roth). You should be able to use the standard SIMPLE plan to achieve what your looking for.

DonaldC Your post really surprised me, so I went back and looked at some other choices. It seems that both the traditional IRA and Roth IRA are also defaulting to taxable. I didn't take time to check the others.
That seems like a problem to given that the help says:
For benefits that you set up, Sage 50 selects the taxes that are usually affected for the benefit. Normally you would not need to change these settings.
