The Sales Order date is the Ordered date, so it's odd to enter a future date.  There is no real risk, as long as you're ready to start a new Calendar Year or Fiscal Year if required, and ready to close the prior year.

The Ship Date / Expected Date should match the actual expectation.  There's no risk to entering a ship date in the future, I think Sage 50 allows entries up to 10 years away.
