You should be able to type anything you like into the description field (unless that field is hidden).

A Sales Quote will need some line item with a dollar amount in order to record it.   i.e. 1 hour labour x $xx.xx

The problem is that I dont want to have the quantity or price fields filled out for some entries. I want a description to be on the sales quote so clients are aware of the services, but for hourly services, I would have no way of knowing how much to charge some things... Does that make sense?
