Setup, Reports & Forms, Cheques, pick your chequing account, and fill in the correct number in the appropriate Next Cheque No box.

It is not allowing me to change the cheque - its greyed out.
Can I only make the change when it is in single user mode?
Yes, it is a company-wide setting so you should only be able to change it when in single-user mode with all windows closed.
