The currency option is available in all versions. The Pro version only has 2 functional currencies whereas the Premium and Quantum versions have more than 2 functional currencies.

I'll clarify what I meant. I know there are multiple currencies that exist in the Premium Version (which I'm using) but the currency I want to use is not listed. Am I stuck with using only the currencies listed or can I add a new currency?

Yes, you should be able to add the currency you desire. Go to setup, settings, currencies and add the currency you want. Ensure you have all your transaction screens closed and are in single user mode.
