(Not the official answer) but it should work same as Hyper-V environment.

I'd say Hyper V is the only one mentioned in documentation as its Microsoft's version,
I've run Sage 200 2013 on VSphere for test environments with no problems before.
As long as it is still on the supported operating system, don't see why not.

The main big changes for Sage 200 2016 was dropping support for Citrix XenAP Server and SBS Server 2011.

Officiall I have no idea, Unofficially, Yes it does.

All of our development VMs are using VMWare, and we have machines using all versions from 2010 to 2016.
I think the point Paul Daly above makes is probably more important, is to make sure you have a supported operating system.
