I know that there is a limitation in Workspaces where if you resize a column on a list type Content Part it isn't sticky.  Log out and back in again and your change is lost. 

But does anyone know of a way to at least fix a column to a specific default width? 

I assume a modification to the Content Part XML would be needed, where you would enter a specific width in the column definition.

If it's possible it would be great to see a sample.
