The product codes don't have a description 1 and 2. However, if you create a product invoice > select the product cod > press F3 on your keyboard, you'll be able to enter additional information in comment 1 and comment 2 boxes. These comment section should be pulled through on the layout when printing.

You can't pre-populate these though so would have to be manually written each time.

I have tried that, but I take it we need to populate the information in the comments each time?

I am looking for somewhere where we can put the rest of the product description (which will be pre populated), that will then pull through on quotes and orders.

It isn't possible unfortunately. 

You can log this as a suggestion to help improve the software, on our Sage community. To do this, sign in to https://sagecity.na.sage.com/gb > select the relevant product > click the Ideas option from under the heading > click ‘New’
