Sage will post the COGS if it is a Stock Item class or Assembly or Master Stock.  So need more info to determine what the issue is but I would start there.  Also, if there isn't any qty on hand or any history then the system doesn't have a costing tier to pull from Inventory to book COGS.  Once you have history you can sell negative but the system will use the Last Cost until it can be determined what the real cost is when you receive in the inventory.

Some additional context, when I sold the product the quantity reflected in the products section reduced to the correct amount (inline with invoiced volume). There was qty in stock for all items hold.
