You'd have to write your own report.
I created one for product quantities but not by category (all our products contained within a single category)

Have you tried the Excel EIR reports?

My solution to this has been to write a report that lists each invoice line linked to stock and customer information and run it in EIR

This allows you to use pivot tables to create all sorts of reports. Including months in columns. The advantage of this approach is that once you start creating these reports , you will want to present the data in all sorts of different ways and requesting a bespoke report everytime is expensive and inefficient

For example, if you use product categories and customer analysis fields, the useful combinations of rows, columns and filters is huge!
