Exchange Integration

We are looking into using exchange Integration but would like some more detailed dociment about how the Integration works with in 7.1. We have read over the following documents:

We are after more information about firstly how the exchange Integration works Technically ?

Also in cases in updating contact details which systems wins exchange or CRM?

If a user sent an email to a customer via outlook does the exchange Integration monitor the emails of know address's (of selected intergrated users) or would the email need to be sent via CRM its self? Again how are replys dealt with are they automaticly imported from exchange intergrated users into CRM or is this a manual prosscess?
(we are not using the outlook plugin)
