I don't have Exchange Integration enabled on my instance of Sage CRM right now so I can't double check this. But... I think you will need to disable to integration before you make a change. See this thread

I appreciate the response however the post in the link says, "To solve the problem, I have deactivated the integration, and then in the table EWSMailbox change the actual mail value in field EWMA_Mail for something different. Now in CRM I have activated the mailbox for the user and activate the integration. CRM insert new record for the e-mail values and all work ok."

But when I look in the EWSMailbox table I do not have the column he mentions. Here is the complete list of columns I have available:
