SageCRM organiser appointment query with Exchange integration enabled

We have a customer who has a sales admin team that books appointments in SageCRM on behalf of their engineers to go on site and the assigned engineer can change regularly

When creating an appointment in SageCRM without Exchange integration enabled an appointment can be created by the sale admin CRM users and assigned to any Engineer / CRM user and is saved with the organiser user of the CRM sales admin. If you need to then change the appointment to be assigned to a different CRM user / Engineer this can be assigned without any issues.

If you enable / use exchange integration so all synced with Office 365 if you can create an appointment for a different user than yourself you are not able to save this  appointment as the below message  appears:
"You cannot save an appointment if the organiser is not present in the user list. In order to save this appointment please ensure that the specified organiser has been added to the user list."

The sales Admin team complete all booking for engineers and do not want to have all the engineers appointments against their own calendars as this is incorrect. we have tried to work around this by creating a generic CRM user called Appt scheduler so when a n appointment is created this CRM user is set as the organiser and is always added as a user to the appointments but this is not ideal so wondered if anyone has a better work around or solution to this issue as not ideal for the customer?
