I don't see anywhere in CRM that allows us to control what CRM synchronises over to Exchange. I would suggest speaking to your business partner and seeing if they can raise this as a change request.
Have just come across this ourselves and thinking how great it would be - but it would rely on users having the correct Categories set up in their Outlook.
Not sure if its possible within core product, its simple enough to get with the graph API though, we built some scripts to check O365 calendar categories and perform some additional rules and field changes in Sage CRM cases.

I search something to get color (category) from CRM communications and "send" it in outlook (O365) appointement ..
Stanislas_p can you let me know the URL that you used for Sage Customer Voices? I want to make sure that messages are being passed to the development team for Sage CRM.
