Production Management is the new Work Order module and will give you real time data and cost capture, status changes, and more.  Your Sage 100 Reseller should be able to provide you with more details.  You can also follow this link https://info.scanco.com/production-management to learn more, as well as view a webinar on Production Management.

You would need to log labor and material issues after each step in a work center on each WO in order to see real time throughput.  That can be done manually in Sage, or there are 3rd party programs that can collect the data (via keyed entry or barcode scanner) and send it to Sage.  Either way there needs to be some logging of the data real time if you want to estimate throughput and capacity.
