We have a client that would like to add the Weight field that is shown on the Main tab in Item Maintenance to a new tab he created. I am not asking to move the field from the Main tab, just repeat it on the new tab. I thought perhaps to create a UDF field to hold the value of the Weight field, but I can't seem to be able to do this either. Has anyone else accomplished this?

That is true in the sense of adding it as a field, like a multi-line, list box, or dropbox, but if you only want to see the value, you can add a text item and for the text, enter "=ShipWeight$".…
Add a UDF, with a script to keep the values the same. Fields cannot be added to more than one spot on a panel (not even on different tabs).
I should have mentioned this in original post but you can pretty much treat the "Text" field like an excel formula, if it begins with a equal sign, it expects the result of the "formula" to be a string…

If you need a numeric field displayed this way, you wrap it in the STR function and drop the $. Like this, "=STR(StandardUnitPrice)".
Refer to the online file layouts if you need to in order to determine field type.
