How do I change what appears for information on my screens?

Example: On my Journal Entry screen, I am able to see below the line, the name of GL account I am using, whether the account will be increased or decreased depending on whether I put the number into the debit or credit column, etc. My boss does not have any of this on there. 

Another example, when she looks at invoices, she is not able to see the GL account I entered for the invoice, which I have on my screen when I am logged in,
