Sure you can add a image of a signature or logo to a check. but I would not

AP -> Utilities -> AP Forms - choose your check & copy it  (SAVE under a new name.)

add the image in approx position on the layout and TEST

I also agree with Vince, adding the signature, although possible, is not recommended for security reasons.  Adding a company logo to the check template is fine, but adding the signature to the template may open you to security risks for the checking writing process.  Anyone who has the ability to print checks with the check template, can print a check with the signature on it which may not follow your best practices for your company security.
