Would love to learn how to edit the termination reason list.  

There is not currently a way to modify the list of termination reasons. What we did here was expose the field that was only available in Canadian versions of Payroll within US. Payroll. 

In other words, if that list isn't working for you, the altermative is to use a Custom field on the Employee record where you can set a customized list.
