I recommend using MyAssistant. It works very well for emailing pay stubs.
Is this a separate software or is it included in Sage 300?

It is separate module but it is a Sage Module and you can contact your dealer or directly to Sage to purchase it.
I usually recommend a product called "Visual Cut". It's much cheaper, much faster, and more powerful than My Assistant. Cost less than $500.00 to install. https://milletsoftware.com/Visual_CUT.htm . However My Assistant will work with Report Designer reports and Crystal designs, where Visual Cut only works with Crystal report designs. Both are great products, so it depends on your needs.

I asked this same question a few months ago. About 4 weeks ago, we installed a trial version of the VisualCut software. I had a few hiccups getting it going, but now that it is set up, it's FABULOUS. I would highly recommend it.

Is there someone that you hired to set up the Visual Cut & create the reports that you required or were you able to do this in house?
