How do you configure customer columns to include the "State" or custom analysis types

I've been using Sage Accounting (formerly Sage One I think) for a few years. My main gripe is not being able to download useful customer information into a CSV file. I can manually select all customers and download the information displayed in the column headers. The problem is that "State" is not an option for column header. "Address" ,"Zip Code", and "Country" are available options, but not "State". Therefore when I download customer addresses, I have to manually look up each customer account and add the State to the CSV file.

It would also be nice to download customer data by "date of last order" or "date of first order" so I knew which customers we have likely lost, and which are still relevant

The "Configure Columns" settings alludes to "analysis type1 - 3", but I dont know where those could be defined.

Any help on this would be appreciated.
