If you're not using Stock Groups, setup a temporary stock group, link it to your specific stock items and then you can filter only on that specific stock group to gather only the specific stock items in the stock count.

We make use of stock groups but not Item Categories.

Not sure where this will impact if I use them?

Yes, using Item Categories can also work.

Don't worry that it will negatively impact anything else if you haven't used it anywhere before
