Do you have the printer driver's install software to install it on that PC, and  / or have you already installed it?

Will this printer also be the general default printer for that PC, including any non-Evolution printing jobs?

Yes i have installed drivers, 

It is NOT the default printer for the PC, it will only be used for SAGE

In that case, you can select the specific printer driver within the relevant document's (e.g. Invoice) Printer Options screen.

Sure, do the following: 
1. Open the relevant source doc, e.g. Invoice
2. In here go to Print | Print Options | Print Options Invoice
3. Then go to the Printer Options tab
