An inventory journal can be reversed by taking out the quantities that were brought in with the wrong amount.

If the wrong amount affected the item's average cost, you need to take out all the quantities on hand for that item.

You first need to set the average cost to be 0.00 when zero on hand under Setup | Inventory | Configuration. You can then take out the quantities and bring them back with the correct amount.
