Creating specific GL Account for Service Items

Hi.
In Evolution 200, we had to create groups of items and a particular group will have an Inventory, Sales, Purchases account that we could set.  For example, service items pertaining to Accounting will have the Inventory field set to "Accounting Sales" GL account. So, every sale we make for an accounting item will be recorded in "Accounting Sales" GL Account (Revenue).
Here, on creating the item I can see the option to set the Sales Account as per below, by creating a new account:
However, I see that in the List of Accounts it is only viewable?  
Also, if I create it initially in the List of Accounts it does not appear in the Items Sales Account options, as in above. 
Is that fine?  What if need to delete/modify this account later?
