Sage will let you view a workbook in an unreadably small format, or have it printed in the U.S. and shipped to you at considerable expense.  Google 'Sage 50 Workbook'.

there is a course available from CCI, they also sell just the workbooks, and

there is a good workbook by Mary Purbhoo that seems to be out of stock at Chapters whenever I look.  Currently it's "Out of stock online" and "Not stocked in stores".   Maybe you'll have more luck going to Pearson directly.   I tried their E-Book once.  I'm not a fan.

Most of core functionality of Sage 50 has been the same since the 2008 release, so any recent text will be basically the same as the latest release.

If anyone local is offering a course, they may have a workbook available. 

Sage used to offer a workbook as a PDF download, for 2006 and 2007.  It would do, in a pinch, and it is free.  I haven't been able to locate it online, it seems to have been taken down.

Avoid any of the 'Sage 50 Accounts'  (UK Software, totally different) or

"Sage 50" that don't specify that they are the CANADIAN edition, or refer to 'Peachtree' in prior editions.  (US software, also totally different)

Before you click 'buy', be triple sure that you're getting the one for the right country version of Sage 50.

I know some textbooks that are related to Sage 50 and they are as follows:

1. There is a website called CCI Learning Solutions that has Sage 50 Premium Accounting in both Levels 1 & 2.

2. If you register to Sage University website and take the Course Training Curriculum, then you order the self-study guide that includes the Accounting Modules, Payroll Module, Power User or get one big book that has all 3 levels except for Application Specialist.

I order each and every one of them since I took Simply Accounting training at Seneca College in 2012 and continue with Sage 50 Accounting as well as completing Sage University course training curriculum in 2017.
