1 employee has been missed off all payroll reports but has been included on the FPS report, how can I get them included in the reports or run a report which shows his pay please?

Once you've updated records you can only use Post Update reports for the employee. There are some pre update reports that have post update equivalents, so the easiest option is to check for one of these that gives what you need.
The Payment summary history part 1 may be useful here, and it's available if you click the Reports button, then click the Employee category on the left.
