We have a repair department where we have lots of non-stock items. Is there a way in Sage300 to be able to keep track of those items? We don't want to consider them as inventory items.

One approach would be to set up a generic item code with serialization enabled.
You can receive it into inventory using an I/C receipt at zero cost and assign it a serial number that is the same as the order number for service.
Once service is complete, ship the item with the rest of the service order, specifying the serial number assigned during the I/C receipt.
