Need help determining the proper new version of Sage for my business

We have been using Sage 50 Pro Accounting 2013 since 2013 and considering to upgrade to a manufacturing based platform.  I have reviewed the sage.com web site and an finding it difficult to determine the features versus the different versions.  I don't want to complain but I am really having a difficult time finding anything on the sage.com web site.

We have been using Excel and Access to track BOM's and inventory because this version of Sage 50 does not handle it the way we need.  We would like to be able to:

Create/revise multi-level BOM.

Generate work tickets.

Generate quotes, sales orders, purchase orders, invoices, etc.

Do the other accounting functions included with Sage 50 Accounting.

Payroll (possibly at a later time).

Import my existing data to the new version.

Link bank/credit card accounts.

There would be one, possibly two employees using this software.

I have seen video demos for Sage 50 Manufacturing but I cannot find this anywhere on the web site.  The closest I was able to find was Sage 100 or 300 ERP and I am not understanding if this is what we need or not.  I tried "type of business -> manufacturing" from the menu.  I found a demo of Sage 50 Accounting 2014 (I cannot seem to find where I got it but it was on the Sage 50 web site) and it will not install for me.  

We are in need of a one-stop solution for desktop installation (no cloud-based or subscription).  Again, I cannot seem to find anything about this.  

I would be very grateful if someone can please put me in the right direction.  Before I started my business I learned Sage 50 software at a previous job so I know my way around the software, so I purchased it for my business.  I want to upgrade and stay with Sage.  Thanks in advance for any help.
