How to set up Resale of Insurance Products

We do not have any inventory per se, we sell insurance policies from different carriers and the company gets an override from the sales.  How do I set this up in Sage?  I want to be able to track each Independent Agent, the Carrier they sell from and which Product from that carrier.  I have tried several ways but was not able to figure out how to track all of these in any of the ways I have input them. 

Also, we became partners with the company in Aug 2023 but the company was created in 2020 and was only husband and wife as the owners.  What period and year do I need to put in the beginning balances?  The bank account was already set up when we became partners but there were no liabilities of the company, only the checking account amount.
