In setting up the California sick leave accrual per the Sage knowledgebase instructions, I'm not seeing where there is a cap of 48 hours (6 days) on the accrual amount. Anyone come up with a solution?
Use the "Limit" feature in the setup of the Fringe on each employee's setup screen. The "Limit" can be specified as applying to various periods (i.e. check, weekly, monthly, YTD, etc.). When the limit you've entered is reached there will be no further accrual.
Is the "Limit" feature you're referring to a Sage 300 option? I don't see either a Fringe or Limit feature in the 5-2-1 employee setup screen of Sage 100.

Yes, it's a feature of Sage 300 CRE Payroll. Your question was posted in the Sage 300 forum and I therefore assumed that was the product you were using.
