Best option for extracting data out of Sage 100 into Third-Party software

We are looking at a Third-Party software called Master Control for our QA/QC documentation processing.  With that, we want to be able to extract data out of Sage 100c Advanced v2019.2 (upgrading to v2021 shortly) from Scanco's Manufacturing module, as well as other standard modules like IM, SO, AR.

I am only experienced with using ODBC to extract data out.  So what other options would be best for information (BOI, SDATA, JSON, Other)?  I've tried looking at SData and Json and they are much more technical than I am, so I'm confused as to what they would be used with in any circumstances.

Has anyone worked with Master Control and linked it with Sage 100?

    Will the 3rd party software be on the same network as the Sage server? 

    Or will the queries need to work over the internet (to a cloud service)?

    Different servers.  We have or are in the process of moving everything to a cloud environment, with the exception of Sage 100 of course; with the potential of moving to X3 in the near future.  We are in the early stages with Master Control but Director of QA is leaning heavy that way and from demo I've seen and talked to one other consultant, it's sounds really good for what we need.
