Advice on transitioning physical Sage server to a Hyper-V VM

We currently run Sage 50 US edition on a physical Windows server, with 3-5 users.  I'm planning on transitioning to running Sage 50 as a Hyper-V VM.  

The current physical machine is a Dell Poweredge R230

Intel Xeon E3-1240v5 3.5Ghz

16GB ram

1TB 7.2K RPM Sata 6Gbps hard drives in RAID1

The new VM would be running on a Hyper-V host comparable to the following:

Windows Server 2016 or 2019
Dell PowerEdge R330
Intel Xeon E3-1220 v5 3.0Ghz
2TB 7.2K RPM Sata 6Gbps drives in Raid1
32 GB ram

Looking at current server usage, it's at about 1% CPU and 6.2 GB RAM on average.  The Actian PSQL process is only using about 1.4 GB ram.

The new VM host would have SATA hard drives and not SSDs, which is my chief concern.

What has been your experience with running Sage as a VM?  Do you think I should worry about Sage performance on a VM host without SSDs?
