The question that you have to ask yourself is do you want to know QUANTITY and DOLLARS of what you sell/stock, or do you just care about the DOLLARS that you sell? If you need to know QUANTITY and DOLLARS, then you should choose STOCK as your Item Class. When you add to your Inventory, whether it be that you purchased feed, purchased chickens, or the chickens produced eggs, then you can add these quantities to your Inventory with their respective costs, along with quantities, and then when these are consumed, sold, or even matured, you can enter Inventory Adjustments and/or Sales to take them out of Inventory. With a Stock Item Class, you always know not only what you have on hand, but also it's worth - and in the end, you even review overall your profitability. There is much to consider for your particular business because you don’t just buy and sell chickens and eggs. You want to be able to manage the cost of  your chickens, production of eggs etc. The way I see it is you would have to set up Job Cost as cost centers for the areas of production you want to manage to distribute purchases, overhead costs, etc. as a production center yields a saleable product with a cost,  you can add the items into inventory according to the item yield and cost.
