Do you mean auditing creates/modify/delete on table records? If so that's on the Audit tab in Development > Tables (GESATB). The function help is a good start. View those audit entries via the Tables & Fields functions in Usage > Audit. It does what I'd expect, (logging table activities as specified), although I've never tried it with the workflow system.
