Please suggest me what modules I can skip to keep the install minimum while I need this install for my study for common tools and basic development on my laptop.

More specifically, can I skip Mongo db ?

I would not call these, modules, SAGE X3 is a comprehensive ERP when you install it, it comes with all the modules, sales, purchasing, accounting, production, common tools, etc. These install folders you show are components and you need them all for the solution to work. For example MongoDB is a database engine to manage the administrative data of the system.
